The Chacon family has been producing coffee on the Las Lajas farm for three generations, and we've been fortunate to visit many times over the years. For this coffee, they used a unique "honey" process by leaving some of the fruity pulp on the seed while sun-drying. This leftover pulp becomes like a sticky-sweet honey, adding its own flavors to the coffee.
